Slow fermentation creates the flavour, texture, and keeping quality that make this artisan-style long-fermented loaf so special. We give the dough time to fully develop before baking, producing a beautifully balanced loaf with a crisp crust, an airy yet satisfying crumb, and a depth of flavour you simply can’t rush.
Unlike sourdough, this Long-Fermented Loaf has no tanginess—just the comforting taste of well-made bread with subtle complexity and a clean finish. Enjoy it as toast, build your favourite sandwich, pair it with soup, or simply tear into it while it’s still warm.
We bake each loaf fresh in small batches. Every loaf weighs approximately 650 g after baking and is sold whole and unsliced to preserve its freshness.
Storage & Freezing: This long-fermented loaf freezes beautifully. Thaw it overnight in the refrigerator. To bring back that fresh-baked texture and crisp crust, warm it in a preheated 400°F oven for 5–10 minutes. If you’re using an air fryer oven, bake for up to 5 minutes before slicing.
